Directions:

First, preheat the oven to 350°F. Lightly mist 2 baking sheets with vegetable oil spray and set them aside.

Place the flour, baking powder, baking soda, & salt in your small bowl and stir to combine well. Set the flour mixture aside.

Place the egg in your large mixing bowl and beat with your electric mixer on medium speed until it increases in volume, 2 to 3 minutes. Add the granulated sugar, brown sugar, and vanilla and beat to just combine. Add 1/2 of the flour mix & beat till combined. Add the oil and beat to combine. Add the remaining flour mixture & beat until the ingredients are well combined, 30 seconds. Stir in the raisins, Chex cereal, and the coconut, if using.

Drop the cookie dough by heaping teaspoons onto the prepared baking sheets 2 inches apart. Place some granulated sugar in a shallow bowl, dip a glass in the sugar, and use the glass to press down on the spoonfuls of dough to flatten them. Place the baking sheets in the oven.

Bake the cookies till they are lightly browned around the edges, 10 to 12 minutes. Next, transfer the baking sheets to wire racks. Let the cookies cool for about 1 minute. Using a spatula, move the cookies to wire racks to cool completely, about 15 minutes longer. Repeat then with the remaining cookie dough, if any. The cookies can be stored in an airtight container at room temperature for up to 5 days.
